a healthy treat: chocolate covered strawberries


It’s the week after New Years and we’re all trying to be on our best behavior. But if you have a party coming up and don’t want to skimp on the sweets, consider a classic- chocolate covered strawberries. A little fruit & dark chocolate never hurt anyone, and you can consider it a practice run for your upcoming Valentine’s Day plans. If you want to add some crunch while keeping this treat on the healthy side, try rolling the finished berries in crushed pretzel bits or nuts. Place them in mini cupcake liners or a pretty box for serving and you’re good to go!

Chocolate Covered Strawberries

20 or so clean, dry strawberries with stems intact
1/2 lb. semi-sweet chocolate, chopped or chips
1-2 tbsp vegetable oil
crushed pretzels or nuts (if desired)

Place chocolate in the top of a double-boiler or a heat-proof bowl set over a pan of simmering water. Stir chocolate and oil until melted, about 5 minutes (start with 1 tbsp oil and add more if chocolate is too thick).
Line a cookie sheet with waxed or parchment paper.
Dip strawberries, one at a time, into the melted chocolate. Set on paper lined tray and chill for 20 minutes until set. (note: longer than an hour in the refrigerator will cause condensation on the strawberries).

I was super lazy and just melted milk chocolate in the microwave and dipped the cherries in
